new spare cylinder in recent manufacture pietta 1851 .44 will not function when cooking hammer wedge is put in with a wood hammer handle and a couple taps

You may have to "fit" from the front. The cylinders side by side should give you an idea of how much fitting. Of course, if you have calipers you can measure.

I had the same problem with a spare .36 cylinder in a Pietta Navy. It just didn't function. I never bothered to fit it.

I'd see if that cylinder functions with no barrel assembly and the gun frame pointed upward.

Also the ratchet star quite often will have a burr or two kicked up by the hand nose that makes them seem to long. I just give then a couple of licks on a ceramic stone or diamond file to remove the proud metal . Make sure you keep the cylinder square to the stone or file. This is easily accomplished by holding the cylinder to a V bock square while lapping it out.
I bought a spare cylinder for my Pietta 58 probably 35 years ago and it fit right in, was accurate but printed a nice group off to one side of that printed with the original cylinder. This from a bench over sand bags.
