I'm in the process of somewhat defarbing a Ultra-Hi kit Flintlock Kentucky I picked up at a trade show last weekend. Reshaping the stock, shortening the barrel a inch or two, getting rid of the obnoxious brass nose cap and moving the sight back. (Yes and installing a underlug and pinning the barrel) What I'm curious about is on early American pistols if they were more commonly blued, browned or polished and left in the white. I'm kind of leaning towards in the white for now.
