Bear recipies??

I did not want to get going on a diferent topic on Shines thread, So I thought I would start another!!
We have a bunch of bears in NM but I aint never been privelaged to shoot one. Have been thinking about getting a tag this year, cause I have seen 8 bears over the course of the summer in my trapsin around in the woods!!
Question is what to do with the meat. I just cant bring myself to shoot one and not use the meat. I ate some at rendezvous one time that was smoked and it was delicious!
Any Recipies?? :confused:
 
Shot a brute last year in Maine, 290lbs dressed...lots of meat out of that one, the Mrs. has been outdoing herself coming up with delicious recipies, made 75lbs of sausage and use it in place of hamburg, or mix it 50/50 for meatloaf, meatballs, tacos, etc...just yummy..

So far my personal favorite has been the bear meat that we canned, hands down the most tender meat I ever et, put the recipie and some pics down in the camp recipie section, highly recommend it...

BTW, the last pic was taken in the same area last week on a trail cam, guess his big brother made it thru the winter, can't wait...

They don't call me Chef fer nothing, you bust em and I'll tell ya how to cook em. Just holler when your ready.
 
Just make sure you cook 'em well done not med. rare. We have a couple of guys in Quebec that are dying a slow and painful death from trichina worms.
 
Had an 80 year old man from Maine, who had hunted and killed many bears in his lifetime, tell me this about cooking them...,

"Cut up the bear meat into very small chunks, cover with water, salt and pepper, and a bottle of brown sauce in a slow cooker. Let it simmer half a day, and add some carrots and onions. At the end of the day, pour it all into a large serving bowl, then heave the bowl off the back porch and head to your nearest steakhouse".


I guess the bears he normally got were either very old, or he never found a way to make them suit his taste....

I've eaten roast of bear from one that had been feeding around an orchard and agri fields, nice and fat young one.
it was delishus.
but I've never cooked it, have raccoon though it was good.
 
You can hunt bears in the spring and the fall. I have only hunted in the spring and I am wondering if a fall bear, that is putting on a lot of weight, tastes better. When have you shoot your bears?
 
I think that may be the thing. "range cattle" used to go to the stockyards to get fattened up before slaughter. I think an animal that is gaining weight may usually taste better while an animal losing weight may not be so good- hence my question about spring bear meat versus fall bear meat.
If the meat isn't all that great- BBQ helps a lot.
