I just got home and cleaned 12 nice brook trout taken on my hand tied dry flies. Really the only trout I like to eat. My son and family will be here in 3 days to help enjoy with fixins.
 
Just got back from a trip where I caught some. Wild brookies are the best. How do you plan on cooking them?
 
Fried, with boilted taters and bacon grease wilted letis/green onion salet. (wish I had some ramps tooo addd)
 
have to get up above 3,000' around here to find brookys. certainly tasty though. save that bacon grease.
my breading mixture is 2 parts buttermilk complete pancake mix and 1 part fine white corn flour w/out lime added. mix together (shake in tight container adding flavorings such as tony's or other cajun/creole..) in a rectangular container with tight lid. add couple of properly cleaned and scraped fish then shake well until coated uniformly including inside. after frying drain on brown paper bag, serve on plate with a small squeeze of lemon atop, with fried taters and onions, kernel corn is a good side as is baked beans (non sweetened or not much sweet).
 
2 pan sized brookies, just caught & cleaned.
Then find a king boletus, cook about 1/3 pound of bacon over coals. Add sliced king boletus, set both aside & cook brookies in the grease. :grin: salt and pepper all.....don't forget to get that beer out of the stream, where you set it to cool. :thumbsup:
 
Many years ago up in Quebec these guys had rectangular pans- heavy gauge. They set the pan over logs or rocks with the coals /fire below and the trout fit in the rectangular pans more compactly. Fried. That and baked beans and stewed tomatoes. Sounds odd but it was a pretty good combination.
Now a days its cornmeal and bacon fat or smoked.

I mentioned this post to my wife. The wilted lettuce salad is a favorite of hers. She suggested a German potato salad (no mayo) would work as well.

No trout in the freezer. I'll have to muddle through with cod fillets.

You have some very fine brookie streams in VA. Give em a shot. Got 9 more today up to 14".
 
roll in corn meal and fry in the bacon grease you cooked before.

For best using the grease cook taters and onions before frying the trout.

When being a great cook make fry bread on sticks or pans to go with them and you are a super chef!!!!
