Should I use a metal bristle brush to clean my Remington 1858 steel frame revolver or a softer plastic bristle brush?
 
You would need a metal brush for use in a bore with leading - not ever a problem with cap & revolvers in normal use.

A nylon bristle brush works well for removing any accumulated crud in the cylinder chambers, and a .22 cal nylon brush works great in the threaded cylinder nipple holes.

Otherwise, I just use hot soapy water and cloth patches in the bore, and a toothbrush for around the hammer face and cylinder recesses.
 
You may use the metal brush in the barrel of the revolver, but unless you have a lot of leading, it is not necessary.

Don't use the wire brush in the cylinder. The effort to change direction of the bristles may cause the brush to get stuck in the cylinder.
