Cooking with Bear fat?

I'm sure being an animal fat it can't be to good for the ole arterys. First thing that comes to mind would be that it's basically as good for you as cooking with pig fat is. Anyone know any scientific study done on bear fat? Good or bad? Just curious... :v
 
Eat well and die happy, I say!! The stuff is supposed to the best stuff for making pie crust.

Let me give you a recipie that involves bear fat, bear oil, venison and maple sugar...

This is from a 18thC Journal.
Boil the venison in the bearfat, take the oil, heat it and add as much sugar as will dissolve. Dip venison in the oil/sugar mix.. Enjoy!

We did this last year, awful good,and a cardiologists dream meal... WHattdayawant?? To live forever?!!? :shocked2:
 
The bad news is that is a saturated fat and a very long chain at that (not good). The good news is that when baking with it, cookies, pastries, breads etc, you use 1/2 of what the recipe calls for so....... :hmm: . It does however, make the best pastries, buns, cookies etc you've ever had. Another indication that it's bad for you. More good news, it has an indefinate shelf life. It will last for ever without refrigeration. With regards to the 18th cent recipe suggested, the body will crave fat when it doesn't get enough. My grandparents remember putting pure bear grease on bread during the depression years because they couldn't get butter and their bodies needed fat. of course, they were working harder than most today and few today lack fat in their diet.

I am no doctor but I thought the problem with the animal fat was if you consumed more than you needed and then your body didn't know what to do with the excess and your arteries started getting clogged. Many moons ago I was camped out with some Cree, as long as they are on their own turf they can hunt anytime(at least back then), in any event they pretty much used bear for the fat requirements. When it comes to eating bear the ribs are okay and maybe some other cuts but the shoulders, etc leave sometime to be desired although the fat seemed okay best I can remember. Its been a long time since I ate any bear. Now buffalo, that's what man was supposed to eat IMO.
