While Davide Pedersoli has made (or at least sold with his companies name) many different kinds of pistols the "Blue Book of Modern Black Powder Values" only shows three cap and ball revolvers.
These are:
PATTERSON- .36 cal. 5 shot, 9 in. octagon barrel... Disc, 1997
REMINGTON PATTERN- .44 cal. perc, 6 shot 7.5 in. octagon barrel... Mfg by Pedersoli
ROGERS & SPENCER (FIENWERKBAU) .44 cal perc., 6 shot, 7.5 in octagon barrel...Disc. 1997.
Manufacutred by Fienwerkbau using the latest technology, molybdenum chrome steel frame etc...Last MSR was $1850.
ROGERS & SPENCER- Similar to the model above Mfg. by Pedersoli.
This doesn't mean that Pedersoli never made or offered a 1851 Colt however, I believe all of the guns made or sold by Pedersoli have the company logo stamped on their frames.
Over the years this logo has varied from a diamond inside a circle, an anvil with DAP inside of it or a lower case "dp" inside a oval.
Any gun being sold as a Pedersoli should have one of these symbols in addition to the usual Italian Proof marks.
