Took a small group of teenagers on a "survival trek" last month. They collected wild ramp (leek), cattail hearts and some other edibles for the the evening meal. I provided them with two live domestic mallard-looking ducks. They killed the ducks and cooked them on a spit. The ducks were stuffed with the leeks. Very tasty. It was first time most of them had seen an animal killed. A good time was had by all.





 
That does look good! Too many people today have only seen meat and vegetables in packages at the supermarket. It's good to teach them how it gets there.

if you repeat the duck roasting pouring scalding hot water over the small feathers left after plucking causes them to loosen up a good bit they can be rubbed off fairly easily so the skin can be eaten.
