My wife killed her 1st bull elk but not with a firearm I can talk about here.

But I can say soft tacos is a real winner for elk heart. Just thin sliced pan browned. Finished in the oven with onion, rice, and a good helping of Mexican spices. On corn saft tacos with a bit of Mexican farm (crumble) cheese and salsa.
 
First, congrats to your wife on such a great score, even if she used one of those new-fangled thingamabobs.

Second, that dish sounds delicious. Elk are a tad scarce in the suburbs of Virginia. But beef liver, thin sliced and sauté lightly, might work as well. Pick up some of that Mexican cheese, grate some Colby or use the feta we always have on hand. Man, that sounds good! (Note to self: defrost some liver.) Now I know what lunch will be tomorrow.

A co-worker showed up a few years ago with some bags of jerky. He made some good jerky. Another co worker heard us talking about it and wanted a taste. He offered her a piece. After eating the piece she commented it tasted different then other jerky she had had, he said "well it's the meat used, that's dried heart." She then made a quick dash to the restroom.
