Hey,I shot two elk today,and saved the hearts,I was wondering if anybody had any good cooking ideas for them.I was told that the hearts could be cooked like a beef roast.
Man do I envy you.Elk heart is one of my favorites.I dont cook it like a roast.I slice it cross ways and roll it in flour and pan fry.Make some gravy and fried taters and onions.Cooking it like a roast should be more tender.Shot the heart outta my elk last year

I boil mine with seasonings than cool it slice it thin and use it in sandwitches.

No really under such conditions you can really tell what you load an ball does on elk size critters
