Mostly I’m a medium to medium rare kind of guy. But with flank steak I love my wife recipe.
I call it 3 fours flank & it’s RARE, there are a bunch of ingredients so here goes”¦”¦

Flank Steak, salt. :grin:

Drop the Steak in a Hot,almost screaming hot, (medium high on our gas stove for about 5 minutes before putting the steak in the pan) Dry, heavy pan wait 4 minutes, flip, wait 4 minutes, remove & rest 4 minutes.

Cut thin & salt. Serve with any starch you like, corn pone? In camp I also like to roll a sweet onion into the coals maybe 5 minutes ahead of starting the steak, peel off the 1st layer to get the ash off & serve(some is well cooked near the middle it is raw onion).

But just the ticket for a fast camp meal Or at home in small corn tortillas with roasted onions & peppers, Fresh avocado and salsa.
 
I do the same with a cut called a "Flat Iron" steak. Much more tender than a flank steak. My favorite way to serve it is to slice it thin and roll up in a flour tortilla.
