Does anybody shoot target with flinters?
How about technique?
I use a two handed brace with mine if something really needs it's ears pierced.
 
Personally, I use a somewhat modified dueling stance with my dueling pistols. The grips on my dueling pistols don't seem to lend themselves to a Weaver stance.

On trail walks where two hands are allowed I have seen people use a two handed hold more akin to rifle shooting. Leading hand on the stock ahead of the lock and master hand on the grip. Seems to work for them, but I find it awkward and it doesn't really improve my hold.

With flintlocks it also really helps to have the bugs worked out of your lock and loads. Delayed or inconsistent ignition is bad enough on a rifle, it will really mess up your pistol shooting.

If I really need to ventilate something I pick up a rifle.
 
I've fired my .50 cal flintlock in matches, which only allow one hand hold. In "primitive" matches which allow 2 hands, I hold it just like I would a modern revolver: face square to the target, left hand wrapped around the right hand. I've almost put 5 balls in one hole at 25 yards with that stance. The pistol itself is a tackdriver, but I have a hard time seeing the tacks nowadays much less hittin' 'em.
