Since I brain tan my hides, I hang them head up. That way you can fist off the hide, and all the flesh stays with the hide. I very seldom need to do any fleshing before salting. Going the other way, it seems there are always slabs of meat on the hides. I picked up eight more hides today, and can pretty much tell if they were skinned up or down, and who got a brand new hunting knife that didn't know how to skin a deer in the first place! Scored places all over it. Totally unnecessary, and makes the guy look like a true pilgrim. I much prefer to tan garment quality, rather than craft quality hides.
