All the discussion of cornbread got me thinking of a failed attempt at hominy I made more than 40 yrs ago. Al said though I turned it around to a win. My attempt was with homemade lye as I was heating with wood and my FIL raised several acres of open pollinated corn for feed each year. The corn was Hickory King. Apparently my lye concentration wasn’t strong enough and the skin would not slip from the grains. Not to be defeateated I grabbed the old sausage grinder and put on the finest cutter, which isn’t very small. I ran the softened corn skin and all thru twice and made a very stiff dough that ended up along the best tasting soft corn tortillas I have eaten. Tomorrow I intend to attempt that same mistake.
