How to Soften Leather?

I am researching making a shooting bag. I have a general idea of the pattern I want to use. I have some leather that is two to three ounces but is very stiff. If I sew it together inside out, I am afraid it will be to stiff to turn the right side out. I have two questions. Should I soften the leather before sewing it? And what is the best methiod of softening the leather before I sew it together? Thans for your help.
 
You will soak the bag in water to turn it right side out...that will make it plenty pliable.

Might be a good idea as mentioned to sew it first, soak it down, then turn it. Have on hand an old broom stick handle, the rounded end, to help punch the seams proper. Some leathers have a bad habit of puckering up badly once wet on the seams as they dry.
