I'd like to make (if possible, rather than buy) a knee-length hunting shirt probably in linen, and then another layered shirt in wool.

Any suggestions on a pattern? Should I buy a pattern and if so, suggestion on where to procure one?

There are several companies making patterns; I don't have my list of resources here now. Just Google long hunter shirt pattern or hunting shirt pattern. I know Dixie Gun Works has patterns, also Jas. Townsend and Northwest Traders.
 
The Eagle's View hunting frock pattern is authentic and easy to make. Got mine from Jas Townsend.

A lot of patterns out there are good, some are bad. There's a site called the great pattern review that is good to check out.

Instead of a pattern, I would suggest buying Beth Gilguns' book "Tidings from the 18th century". It has all the information needed to make a hunting shirt as well as a great many other things.
 
I would second what Black Hand said. There absolutely no need of a pattern. The entire shirt is made of rectangles, and maybe a couple of triangles at the collar, but even these aren't entirely necessary. Now, if you're talking about the wrap around fringed hunting shirt, what Wallace Gusler considers the real hunting shirt, some of these were somewhat tailored, but not to a great extent. Buy the Gilgun book. There is a lot more in it than just hunting shirts.
