You will need:

2 onions
approximately 1 lb shredded Emmenthaler or other Swiss cheese; smoked cheddar optional
flour
4 eggs
water
1 pinch paprika
1 pinch nutmeg
oil
salt to taste

large pot boiling water
fry pan
dutch oven
cutting board
spaetzle grater (optional, but recommended)

Mix eggs, 2 cups flour, nutmeg & paprika together with enough water to make sticky dough (generally about 1 cup, give or take).
Put dough on cutting board, cut off small strips with sharp knife over boiling water to make noodles. when noodles float and water returns to boil, the noodles (spaetzle) are done. Remove from water and place in Dutch oven.

Slice onions thinly. Dredge in flour and fry in oil until golden brown. Drain; mix with spaetzle, and mix in cheese. Cook over low-medium heat until all cheese is melted. Salt to taste.

This is a gourmet German version of Mac 'n Cheese. It's not diet food, but delicious!
 
Oh it's not a dish to eat every day, that's for sure!

Yet on a cold evening, after a long day, it is delicious. If you let the frizzled onions sit a few minutes on brown paper or an absorbent cloth, you get rid of a lot of the oil from them, and while the cheese has oil, the dish doesn't seem greasy at all. The only salt is what you put on.

Still, it's certainly an indulgence, rather than a staple, but it is tastier and better for you than fast food, or a lot of things in the US diet.
