Has anyone thought about making a lever actuated matchlock from scratch? I know the lock would be relatively simple to make, but I feel like the stock and barrel would be difficult. Thoughts?

If you are thinking about a European styled gun...
The lock is relatively easy to make.
The stock's style is different, but no more difficult to make from a plank than any other. Probably easier than many. These are pretty basic guns.
Tapered octagon to round, swamped barrels are common on originals. An straight tapered octagon to round barrel will work. As will a tapered round barrel. There are musket style barrels available. Check TOTW.

Yep! and you are exactly right....Barrel and stock are the most difficult....especially for me....

I made a couple...I liked the self opening pan
cover style best because it requires a bit more
effort...not common....
