I have an old hewing axe I guess I could give the old ways a try
or just get so frustrated and start beheading people..
that reminds me of.....

There is a man at Silver Dollar City (1880s theme park, Branson, MO) that squares up pine logs all day long by hand. The timbers he makes are used in the buildings and structures in the park and nearby campground. The photos below are not mine, but are the man at SDC, Mark Edwards. I believe he told me his logs are in at least 65 structures in the park.

Hard to get a nice square log with a double bitted axe
 
N.E. Missouri - farm house we live in has walnut beams 25 feet long, all hand-hewn, squared - rebuilt in 1914. Mixture around here between debarked round and squared. "Cabin Industries" included cutting wood for steamboats and "Tie Hacking" (making railroad crossties from standing trees to fairly precise dimensions). Our forefathers knew the topic. Thanks for posting. I'm the same age. Hang in there.
