Pickled Eggs

Got bored and the hens are still laying eggs. 20-25 a week between the 4 hens. So I tried my hand at pickling some.

I like pickled eggs, but only when they are thrown in with pickled beets. The first time I saw eggs pickled without beets, I thought they were joking. Never saw them without beets before.

There was a traditional recipe to preserve eggs, with alum and some other things. The recipe seemed a little scary. (As I recall, some ingredients are poisonous. Sort of like using lye to make hominy)
 
I make pickled eggs for hubby sans beets or beet juice. He's not fond of beets. He does like them hot, so I add sliced hot peppers, a small piece of ghost pepper, onion slices and tobasco to the brine.
 
Beer joint food, alone with Rosemond pickled sausages. I don't usually eat them because no one around here sells them and I am not going to pickle them.

I love the taste of pickled beets, and the combination in the OP looks very interesting.
 
Seeing I'm totally unfamiliar w/ pickled eggs...have a few questions. Are they pickled w/o the shells and in order to do this, are they really hard boiled eggs?

Love pickled beets w/ caraway seeds. so when the eggs are soaked in the beets, they become red? Sounds like they would be tasty and will do some.

One other question....do any of you hang them on the Xmas tree as edible ornaments?.....Fred
 
Yes they are normally peeled.

BUT you can also make Chinese Tea Eggs which are made with cracked shells, left on. When done I'm told (and need to try) pickling these for long term storage in white vinegar and water. They are supposed to keep their flavor and distinct taste.

Pickled Beet Eggs are pickled eggs with beet juice from canned beets added. Modifies the flavor, and colors the eggs. These should not be confused with the red eggs used at Greek Easter, nor do they make good ornaments (other than on top of a salad). :wink:

You might also try making Proper Scotch Eggs with a spicey, pickled egg.

I read about using slaked lime and using that lime is dangerous enough. As I recall the recipe I recall used something called water glass?
 
Pickling eggs and preserving eggs, are two distinctly different things.....



Pickled eggs should be boiled hard and peeled....anything that is added to the jar should be boiled to prevent food poisoning.
I also store them in the fridge for extra insurance.
 
One of the reported cases of food poisoning with pickled eggs involved eggs that had been skewered with toothpicks. The toothpicks introduced bacterium into the center of the egg where it could grow...despite being in an acidic environment......
 
You can purchase BEET POWDER at about any Asian grocery store and sometimes at your bigger grocery supper markets in the Asian section. Good flavor and color for those pickled eggs.
