red beans and rice

I have the books, But! I lent them to my son-in-law; I just E-mailed him and asked if he could send me the recipe. It might take a day or two but I’ll post it as soon as I can. Unless someone post it first.
 
Wayne, it's in Buckskinning 3.
1 lb red beans, soaked overnight
3/4 lb salt pork, diced
2qt water
3 cups chopped onions
1 cup chopped red bell pepper
2 cloves garlic,crushed
1 tsp cayenne
1 tsp blk pepper
2 splashes tobasco
1 pinch oregano
1 pinch tyme
1 lb hard sausage, sliced

Rinse salt pork with boiling water, twice
Cook pork and beans in 2qts water, 1hr.
Add all ingredients except sausage.
Cook for one additional hour.
Add sausage, simmer 45 minutes.
Let cool. reheat while cooking 4 cups brown rice in 8 cups water, tighly sealed, until tender.
serve and enjoy!
 
Thanks. It's been about 20 years since i last looked through them. :) Remembered it was good though.
