I doubt this has any historical authenticity, but oh, boy, it sounds good:

REUBEN SOUP

Absolute best thing to do with leftover corned beef or smoked bear ham.

Reuben Soup!!!

5 cups chicken broth
0.75 to 1 lb shredded or chopped corned beef/bear
10 oz. drained kraut
1/2 Cup chopped onion
2 cloves garlic minced
1 tsp thyme
1/2 tsp tarragon crushed
1/2 tsp ground pepper
1 bay leaf
1/3 Cup water
3 TBSP cornstarch
2 carrots shredded
12 oz. processed swiss cheese & 1 cup shredded natural swiss cheese
1 cup cream, or half & half
toasted rye croutons

In a 6 qt kettle add chicken broth, meat, kraut, onion, garlic, thyme, tarragon, pepper, and bay leaf....bring to boil, reduce heat, simmer 30 min.

Heat to boil...Stir water and cornstarch together and add to soup, then add shredded carrot to soup, stir until thickened and bubbly

Reduce heat back to simmer and add cheese and cook until melted, stir cheese in, then stir in half & half and heat through....top with rye croutons.

If you like Reuben's, you'll love this stuff.
 
MMMMM sounds rightous for cold weather, gonna have to try that one. Add some good rye bread with butter n chow down :)
 
Ya know..., this particular sub-forum should have disclaimers warning folks NOT to read it if it's near mealtime and they have not eaten.

NOW I have to go to the store and get some corned beef! And some rye bread to slice and toast into rye croutons!!

Ohio's Bear population is only now growing above the "incredibly rare" status. So I rassle a few every year, just to stay in shape, but have to let them go when I'm done with them.

Seriously, bear roast is so good that I just never see any leftovers.
