Of all the forums I'm on, I figured this was the best place to ask-I got me one o'them new-fangled rotisserie ovens. Anyone want to suggest some good recipes/spice mixes for a whole chicken? Just did my first one with a bagged mesquite flavor mix from the butcher shop, and sprinkled on a little thyme. Came out pretty good, but someone with experience here could make it great, I'm sure. It was a 4.5 lb. chicken, cooked it at 350 for two hours.
 
Try this for a mix/rub...

Dry Mix:
1 tsp oregano
1 tsp granulated garlic
1 tsp dried basil
1 tsp dried thyme
salt & pepper to taste

Use olive oil to lightly coat the whole bird, then sprinkle the above mixture generously on the whole bird...cook as you did your original bird.

If you like a little spice, add cracked red pepper to the mix.

For a Southwest Flare, thy this mix

1 tsp granulated garlic
1 tsp dried oregano
1/2 tsp chipotle powder
1 tsp white granulated sugar
1/2 tsp ground cumin
1 tablespoon olive oil
1/4 bunch chopped cilantro (stems and leaves)
juice from 1/2 lime
salt & pepper to taste

mix all ingredients together and let marinate for at least 30 minutes before you cook...cook same as original bird.

Thanks TrailChef, both of those recipes sound right up my alley. Can I buy granulated garlic, or will I be making my own? I've never seen the stuff before (but haven't looked for it, either).

Yup, you can buy it at the local supermarket, some people call it garlic powder, but it's not true powder...the white stuff that looks like flour. In the food service industry we buy it as granulated, but the Mrs. just reminded me most people call it garlic powder.

Yep, and thanks again. I'm not a heavy garlic user in my cooking, so I wouldn't have made the connection, but I will be picking up some garlic powder. I'm mostly a black pepper/coriander/thyme user, though I've experimented with the powder form MSG out of pure curiousity. If you ever need me to return the favor, I specialize in heart-healthy walleye and bluegill. I also do great bison burgers, lake perch, and steaks of any kind. No one has ever shot down my taco meat recipes either. I'm half-jap by descent, so I might be able to help you out on eastern recipes too if you have the need. If I can't help you there, my mom is the ultimate untapped resource on that. Just shoot me a PM. :hatsoff:
