It can be. If you like some of the American IPAs that are made with Chinook hops you might like a spruce beer. Chinooks have a slight piney flavor to them, depending on how they are used.
Right about now is the right time to harvest the first-flush spruce tips that are starting to break out. The little buds that come every spring are what to use, as soon as the brown "paper" peels and exposes the pale bundle of young needles. That's what to use. There is a spruce essence available, but that makes a "Pine-Sol" beer.

I have some Spruce lager, made by Yards Brewery in Philadelphia. It's supposed to be based on Ben Franklin's recipe. I like it.
 
Many years ago I became an avid home brewer. I was at a size 38 waist and went to a 46 as a result. Thus I quit homebrewing.

I did have the opportunity to drink some spruce beer. I co worker brewed a batch and gave me a couple of bottles. I liked it. It tasted like a really strong IPA. Almost like Bass Ale but stronger and a hint of the spruce essense in each imbibement.

From what he told me rack time( the final fermentation and aging process in the bottle) was several months. If you do it any less the result is horrid.
 
When I finally get around to accumulating everything for homebrewing and have a few simple batches under my belt, this is certainly something I look forward to trying :thumbsup:
