Has anyone ever eaten or visited this Restaurant? My wife got me "the City Tavern" cook book. They are recipes from the 1700's. Here is the history of the Restaurant and how it was open in the 1990's and set up in the same manner it was in the 1700's.

Chef Walter Staib, the author, has a show called A Taste of History in addition to his restaurant and book.

Sometimes I'd wish he'd go into his original recipe a bit more on the show, and talk a bit more about what he's having to adjust because he does use a real hearth and proper 18th century cooking tools...but it's a show for foodies, not for living historians...and they want to see the finished product, not discuss the nitty gritty of the Dutch Oven... :haha:

He's pretty well respected, and he has a lot of courage, for there is more to go wrong with hearth cooking than in a modern kitchen.

His book should be a pretty good presentation, and probably not too heavy on the HC side to discourage you...

ENJOY
