To date, I have been unable to find a detailed photograph or even a complete description of a fine fusil de chasse. Such guns were made and shipped to Canada, but probably in limited numbers, hence the low survival rate.

The only gun that's labeled as a fine hunting gun that I know of is photographed and described on pp 24-27 in The Fusil de Tulle In New France 1691-1741 by Russel Bouchard. And there's no view of the wrist, unfortunately. In fact, there's no view of the butt plate finial either, leaving the reader to wonder what it looked like.

If it were me, I'd change my design to reflect the finer trade guns coming out of St. Etienne, rather than the plainer fusil de chasse. There are plenty of photographs and detailed descriptions of these smooth bores to get you started. Or go with the de chasse pattern and leave off the wrist inlay.
 
The gun you're describing in Bouchards book is actually a new England fowling gun. You should always refer to Kevin Gladyzs book when looking for information on French guns.
 
I getting ready to drill for a tang screw. First one. Luckily with trigger I requested and all the alignment looks like I will be drilling straight own. The tang and trigger plate are parrelell. My usually way of drilling straight won't work. Have you done the two point method with a pin on drill press table.
Looks like it should do good.
No thumbpiece. All steel furniture,,flintlock. Should look plain but nice.

You know, now that you mention it, I always wondered about that gun. The trigger guard didn't look quite right to my untrained eye.

I'm fortunate in owning a copy of Gladysz's book. I sure do wish someone would bring that back to print.
