as my kids like to call it... how does everyone prepare their medision (venision)? i personally take some seasoning... garlic salt, organo, s&p, and some others...
mix in a bowl w/ flour... have pan with HOT oil in it waiting... then roll medallions in the mix... cote evenly.. then place in pan.... carefull it will spit and spatter... VERY HOT!!!! cook til blood comes to the top of the coating... a perfect med rare... cook longer for perferred rednees...
 
That is how our family likes it best too....I then take the meat out of the pan and make a milk gravy... YUMMY...


another thing that would be good...would to do your frying as mentioned and then take it out... mix a can of cream of mushroom soup in with the drippings and put the meat back in... let it simmer just a bit... mmmm gonna have to get some medision out for dinner :haha:
 
Steaks and burgers on the BBQ is always good. Goes great with a cold beer. I also have a local meat market make up some spicey summer sausage. I had 4 ten pound links made last time, and between family, friends and co-workers it vanished without a trace in no time at all.
 
Salt, fresh-ground pepper, hot cast iron and rare to medium rare. Even better cooked over fire. Needs nothing else!!
