Most revolvers use #10
But a few do come from factory now and then with #11.
Do you have any caps, or a close friend?
Try what you got.
#11 if need be, you can lightly pinch the cap to make a tighter fit.
I know not definitive.
I use #10 and 11's on mine, depending if I am out of one or the other.
AS an Aside: My understanding is that a nipple shouldn'tr mushroom when dry firing. The way it was explained to me is that the nipple should have a go between the hammer and it's end(this is where the cap goes)when the hammer is fully down. so if you dry fire your hammer shouldn't hit the nipple.
Now back to the original question.
#10 Remingtons should fit most(not all) nipples. start there. A tin of 100 caps for a pistol is only a few bucks, 5-6 in most places. a small price. Some people use double that in smokes in a day. And if they don't fit you can alwaystrade them with someone.
Definitely use Remington #10 caps. Stock Pietta nipples can vary in size. The caps should fit snugly but must seat all the way down on the nipple. If you find any that are too tight you can work the nipple down a bit. Just place it in a drill press and hold a file against it. Test the cap while in the drill press but wait until the part cools of course. Pietta Remingtons are excellent c&b revolvers.
Your comment about the hammer never hitting the nipple (when things are correct) is true for the cap & ball revolvers.
Cap & ball revolvers hammers should stop against the frame.
Then, I know we all have seen cases where the nipples on a cap & ball gun were too long or not fully screwed into the rear of the cylinder.
We've also seen some replica revolvers that weren't made quite right and the frame on these sometimes allow the hammer to travel too far down before it comes to a rest on the frame.
Any of these faults can allow the hammer to hit the end of the nipple.
Of course, the single shot pistols hammer will hit the end of the nipple when the hammer is down.
I have found that CCI #10 caps fit well on both my Peitta Remington and Colt. The #10 Remington caps slip off. But I had more duds with the CCI's. Getting hard to find CCI's though. Gonna try RWS's next. Like thier musket caps.
All I can get locally are CCI so I buy CCI #10, and took all the nipples from my various revolvers and polished them down to fit perfect. A coat of cold blue and they are good to go. I get 100 percent ignition with CCI when they seat all the way down and snug. #11 always seem a little big for me. Not hard to do.
If the Rem #10 fits good and you have a supply in your local, they are an excellent cap.
You can buy replacement cones/nipples, but 6 of them for each revolver get expensive. My stock Uberti and Pietta nipples have always worked well for me after a little fitting.
