Anyone else pick leeks / ramps?
If so here is a great dish to use them in other than ham and leeks

Leek Pie:

1 P{ie Shell
1 Lb# Italian Susage
1/2 Lb# Shreded Cheese ( of your choice)
1/2 cup chopped leeks (use bought leeks if no wild ones )
1/2 cup green peppers

Mix all the ingredents together and then place in pie crust
Bake @ 450 degree for 10 min
Then turn heat down to 350 for 30 minutes .
Remove from oven and serve after cooling some.
Actually it is even good at room temp.

I stated in the other post, the ramps won't be up here for antoher month. I like to make chille with ramps....you'll sleep alone for a week :crackup: :crackup:
we found that if you freeze them for a while it takes a lot of the bad after effect away.
 
I pickle them in a Bread & Butter Pickle spice in pint jars and they keep all year.
They are really good that way too.

For those of you that enjoy ramps but wish you could have them year round ... give this a try.
After your normal cleaning, cut into slices (1/8") and put them in a dehydrater. After dry (generally overnight), use a coffee grinder and make ramp powder ... yep, ramp powder ... keep it in a sealed jar and use it like you would any other spice.
 
We're going to stuff two chickens with ramps, carrots, diced potato, and rosemary then roast them over the fire this weekend at Ft. Dobbs. Great flavor!!!!
 
Wart I have dried them and i also make them as you would bread and butter pickles to. both turn out well.

Bob now that sounds like some good eating :thumbsup:

FINALLY got to go out and spend a couple days pursuin the turkeys with my boys. No birds yet (hennin up right off the roost), but found a bunch of wild leeks. Right now they are between pencil-sized and pinkie-sized. Not sure how big they get around here. I first found out about them when I lived in VT. There they typically grew in pretty wet soil and one could just grab hold and pull em out. Here they appear to be in firmer ground, and the ones I've had so far I've had to use my fingers and dig em out. Do you folks dig your leeks or just pull em? You reckon they'll be easier to pull once they grow a little bigger? Might have to try that pie...
 
I use a shovle to get them out even in wet soil which as you mentioned they seem to like to grow in. That way you don't break the bulb off as you sometimes will if just pulling them out.
I just got back from hunting turkey and picked a bunch more... no turkey action , it is snowing really hard and sticking on the ground . Sue wish nice weather would return and get the turkey more active.
I am going to make 2 leek pies today with the ones I picked.. Will give one to my Mom of 81 and my brother who lives with her for them to enjoy. Let me know how you like the pie if you should decide to make one and try it. They sure are good.
