Almost a good shot (I love heart too) and really handsome rifle. What kind of peep sight do you have on it?

That’s why I aim for the center of the heart-lung “ football”. Usually taking out the aorta and both lungs. I like my pickled deer heart. I also hunt with a .58 cal flintlock rifle. Usually they go down in sight. BJH
Not me. If it can't be made into jerky, I don't want it. I learned long ago that those parts not considered good gor Jerry, can indeed be used for just that. Never have I eaten hearts or livers.
 
Here is a way to cook liver that I like!
I use only calf or deer liver but some people like hog liver as well
Take and cut into roughly 3"X3" don't worry if bigger or smaller!
Take a pan of boiling water and drop liver in when it turn a little white take it out it will turn light fast!
salt and pepper pieces to taste
dredge in flour and fry in oil just like chicken.
Drain any oil left after frying and add water and onions
cook till done!
I like to add a can of tomato soup to add to the flavor but is not needed!
Mash potatos and butter beans as sides and you have a meal fit for a king! LOL!
Don't knock until you try it!

I'm glad you like it. And I would never disparage another's taste. Plus, eating organs is a way of not wasting meat. My dad always carried a piece of clean linen to wrap the liver in. But to me the whole notion of eating an animal's filter is just too awful for me to try it. Same for the heart. To me, it is just not food. The creature's life was its heart. It beat and nourished it the entire time it was alive and free. I realize that's all in my head. But all of us are individuals with mental traits unlike the majority. The animal's creator was also ours. I just need to be me and welcome everyone else to be the same.

That’s ok Mike every year or two I’ll mooch a bite of liver off a family member, just to be sure I still find it totally repulsive. It still is. BJH

We are not carnivores instead we are omnivores. Therefore, we don't process food exactly the same way. There is a PhD (maybe he's a scientist with a Master's degree) who studied dog nutrition for quite awhile. I don't remember his name but he insists that the best food for carnivores are organs of prey animals. Alpha wolves get first choice and universally eat the liver, kidneys and heart first according to his research. He says that organ meat is the most nutritious supplying most of the essential vitamins and minerals.

Since, as hunters, we eat a lot of meat, perhaps this applies to us too. Anyway, I am 81 and have eaten organ meat my entire life and I am in much better shape physically than most of my friends that are in their 70s. It may be due to genetics but I believe otherwise. I think organ meat especially heart muscle and liver contribute to a healthy life.
