The Crazy Crow knife on the left. The Nowill on the right.
CC is heavier with a more meaty blade. Nowill handle a little longer. Blade profiles similar but Nowill more slender.
Nowill packs easier on belt due to less weight. Both hold a good edge.

I carry the Nowill now. More correct to period of 1800-1840.

I have an old Herter & Son butcher with the same blade shape as those ^^^, but mine has a coffin shape handle. Mine has an 8" blade. Razor sharp and holds that edge very well.
I also have another, unmarked, larger butcher with the same blade style. That one has a 10" blade.
I really don't have much use for the larger one. However, the smaller one I often use to cut steaks or trim roasts.
Then, I have an old "boning knife". The handle on that is about the same as you have pictured above. It has a thin blade and looks like a fish fillet knife, but the blade is too stiff for that purpose. I use it for de-boning large game.
My regular carry hunting knife is an old Western brand sheath knife with a 4" blade. I've been carrying that one for over 40 years. It works well for gutting a deer or peeling potatoes in camp.
