I am, among other things, a hobby blacksmith and have a forge similar to yours. I never really got into knives. Basically, a knife is just a flat piece of metal with a point on one end and one or two tapered edges, hardened and tempered... which boosts the scrap ratio considerably. I always considered them kinda boring to make. Hooks, kitchen implements, and some tools were always more interesting... though making a cannon worm at a renaissance fair was certainly fun.
I suppose I could make a knife though. Got some coil spring fragments I salvaged from the roads around Green Bay and I think I got a piece of ebony for handles.
Not gonna try my hand at engraving a knife blade though. Scrap ratio will be high enough with just the hardening and tempering.
