I have found that the freezer or refrigerator will add moisture to your food. This is not good for dried grains or meat. They should be kept dry until used. IMHO
 
I've eaten parched corn that had been in my haversack for 2 years. As long as it's dry, it seems to be ok.
 
I'm a real newbie but for what it's worth - I bought up a bunch of decorative indian corn at Wally World when it went on sale after Thaksgiving season was over. It parched up well and, to my mind, looks "authentic." Tastes good too! Have to fight off my sons!

Please only eat corn grown for food. Much of that "decorative" corn is dipped in some nasty stuff to preserve it.

I've eaten a bunch of it too. It may not be healthy.
 
How would it be if you grow your own? Just for fun I put in a "Three Sisters" garden this year with decorative Indian corn, pole beans, & squash. I plan to parch some of the corn.

That couldn't be bad for you, could it?
