The most important part of carving is sharpening the tools you have and what you have may be adequate, but I have no knowledge of them. Pheil makes many 4 and six piece sets that will be all you need in carving the most exacting pattern for a longrifle. There are others but in the end, its you. Learning to sharpen them will ease your frustration and accelerate your learning curve.

dal, The last one you listed looks like the one my wife bought me as a Christmas present fifty years ago. I have added a few since then but hardly ever use them as those in that basic set have served me well. Personal preference, I like the handles on them, the palm handled ones don't control as well for me.

Stick with the full size chisels. You use those with both hands and have a lot more control.

I have a 12 piece set of Greenlee chisels which must be 50 years old along with a mix of the Swiss brand gouges and V's. I have found that a flatter gouge gives better control when moving a lot of wood with hand pressure or mallet. A set of smaller palm gouges are needed for the fine finishing work. Glad I collected them when I did after looking at what they cost today. They are a little like potato chips, you always want another and another.
I checked E-Bay and found this set which is pretty much the same as what I'm using. Their finish isn't as fine as the Swiss brand but this is a good starter set'
