As a young man I had a Scout Master who grew up on a tobacco farm near Smithfield North Carolina. The scout troop had a cook out for parents every spring and we would cook pigs or chickens over a hardwood fire all night in the woods. BOY WAS IT GOOD. He had a recipe for a vinegar based (white) sauce that was the best I have ever had. I begged and begged him for the makings but he would not tell. He loved to hunt and went to the great hunting ground while I was in Korea. I still miss that guy to this day. Any of you southern boys know what it may have been?

Try this site, it's a white sauce and probably the traditional NC style.

Like this:

Old Time Eastern North Carolina Barbecue Sauce Recipe

1/2 pound butter
1/2 cup apple cider vinegar (white will work also)
3 tblsp lemon juice (approx. 1 lemon)
1 1/2 tblsp Worcestershire sauce (preferably Lea & Perrins)
1 tblsp honey
2 tsp salt
1 tsp black pepper (fresh ground if you have it)

Once the butter is melted in a sauce pan, stir in all but the vinegar and bring to a boil. Remove the pan from the heat, stir in the vinegar, allow the sauce to cool.

Thanks spence. The second on the "Greatest recepies" list looks about like I remember. GOIN TO TRY IT.

YELLOW BBQ Sauce is also popular in coastal NC/SC.

Most of the recipes are like the 2nd one, with the addition of 2-3 Tablespoons of dry mustard.
