And, if you can buy a copy of Fur-Fish-Game magazine, they usually have some classified ads with furs, etc for sale. There is also Sullivan's Line, a trapper's forum- you could probably post there and have a beaver trapper salt down and send you one for a nominal fee. If you have any fur buyers in your area- check with them.
Maybe it is just me but I thought the fatty beaver tail had a fishy taste which I can't figure out because they are bark eaters and their stomachs look like they are full of shredded wheat cereal. That's from my old fur trapping days in colder climates.
And, if you are buying fur for projects, etc- you usually don't have to get prime pelts. This is a big deal because a lot of sub-prime pelts go for virtually nothing in the big auction houses and yet they are fine for a lot of muzzle loading applications.
 
In 2002, I had beaver meat fried in lard by a cajun fur trapper. Some of the finest meat I have ever tasted, but he told us to never bother with the tails, and described the flavor just as you did.
