Brain tanning, how funky is too funky?

I am in the process of tanning a few hides and just got one that's been off and in 40-60deg temps for about a week. It is fragrant but no animal damage. I was planning on fleshing and getting it bucking tonight. But is there a point of deterioration at which it isn't possible to produce a good piece of leather?
 
Hide can be pretty funky and bounce back just fine. The only problem I have had with not getting to a hide soon enough, is a hair-on tan, and the hair slips or pulls out. Alum tans cure odor problems also.
