I saw the only book TOTW carries that looks close to what I am looking for - http://trackofthewolf.com/popUps/popSingle.aspx?partNum=BOOK-RCBB, called "Red Coat and Brown Bess".

What I am looking for is a book that details the Bess though its variants. The above book does not look as though it has the level of detail I want, but I could be wrong. I am looking for enough detail to build some specimens of various Besses. I would like to try the First model first using as much self built stuff as I can. TOTW carries a lock kit and barrel which I will get since this will be way over my head. In any case, I looked at Amazon as well, but did not have anything I could find.

Can anyone recomend a good book that details the Besses?

BTW, I ordered a whole slew of gun building books from trackofthewolf.com, and they are really very helpfull and fast!

How about Pattern Dates for British Ordnance Small Arms 1718 -1783 by De Witt Bailey ISBN 1-57747-016-8

Or Appendix A in Blackmore's book British Military Firearms 1650- 1850. There's more Bess info on that one sheet of paper than you might ever need ::

...called "Red Coat and Brown Bess".
I have that book, it's very detailed. But you'll probably get more help with your search if you post this question in the 'Smoothbore' section.
