Buffallo Tongue Recipe?

I have access to fresh Buffalo tongue and was thinking of picking one up for a camp out this winter. I would like to get some suggestions about how to prepare one for supper. My Pappy used to boil beef tongue and make us sandwiches and also pickle some. I have a nice dutch oven big enough to hold a large tongue. Any ideas?

I've eaten many a whitetail deer tongue, I parboiled them, let cool, sliced and removed 'skin' then had them with mustard on crackers. Uummm goood. and also pepper jelly.
 
We have beef tongue all the time at our house. We pressure cook it for 45 minutes with onions,garlic carrots, potato and cabbage. It makes a good one pot meal that way. You peel the skin off after it cooks, so you have to wait a little so that it cools off enough to be able to handle. Slice it up and enjoy. This also makes the best tasting broth you've ever had.

I've never had the opportunity to have a buffalo tongue but I imagine that it will cook the same.

Thanks for the idea's. I do not however think that packing the little women's pressure cooker out on the trail would be very wise (for me!) or very PC for that matter. How would the "Buffler" hunters cook one out on the plans? Roast it on the coals?

Yep, on a green forked stick, then peel the skin off. I've never had it this way but don't doubt it's fine eating. Deer tongue that is. I've read about the buffalo hunters and frontiersmen roasting over a fire.
 
I just boil beef tongue with onions, celery leaves, salt, pepper and garlic powder. Also toss in a couple of beef bullion cubes. Let her simmer a couple hours after it comes to a boil. Peel off the skin, slice about 1/8" thick and serve with hot mustard, crackers, and your beverage of choice. I strongly expect this will work for buffalo as well.
 
Cover tongue with water, add peppercorns, salt, onion, garlic and bay leaf. The amount of spicing depends on your taste. When tongue is cooked, cool, pull off skin. You can slice and eat or chop and mix with mayo, chopped sweet pickle for a sandwich spread. Strain out spices in cooking water, or place spices in a cheese cloth bag before cooking. Save strained cooking water for a soup base.
 
Well if you want a bonding experience with the mountain men you could try it their way. They had salt and pepper and would use any wild onions they could find them. The standard way was to boil the tongue for an hour or two( you could put some onions in the water). They then peeled and cut the tongue into slices that were put on a spit for grilling- to add a grilled flavor. Salt and pepper to taste.

I tried to roast a "Buffler" tongue over a campfire both fast and slow and they came out tough as an old raw hide moccasin sole!

My favorite way is to boil and pickle and then slice and serve on fry bread. Their also great par-boiled, skinned and rub with salt and pepper and thrown in a 250 degree smoker for about two hours!....MMMMMM! Getting my mouth watering think'n about it!

Boil/simmer to cook, and then roast to flavor and crisp up the outside. Slice, salt and enjoy.
 
I've cooked (boiled) buffalo tongue a bunch. It's important to due a slow boil (3 to 4 hours) over your fire. Do not roast it, fry it, or other. It is awesome when it is boiled.

OK, I have to ask,where are you getting your
buffalo tongue???? Or have you all harvested
a buffalo???I for one did not know the permits
were that available.Is there a tongue market,that
I don't know about??Hmmm
