I am trying to wrap my head around sizing dies and resulting bullet sizes. I have a Lee .503" and the bullets come out .501" What am I doing wrong, as other sizers work pretty much same -- not matching the size stamped on the die.

I don't see a listing for a .503" sizing die on Lee's website, only a .501". I have a set of adjustable reamers and have enlarged dies with them. You can also saw a slit in a dowel, wrap sandpaper in it and drive it with a drill to open up a die. Work slow, drive a bullet through it and check it with a mike till you get what you want. I only have 1 Lee size kit and it works fine. Are all your sizers made by lee?

Two thousandths is so negligible that I doubt you will ever notice the difference.
What are you shooting these out of?
The other issue may be that the bullet you are pushing through is already under the .503 rating of the die and therefore is not being sized down.
The sizing die will NOT size a smaller bullet to a larger one.
 
Might just be the the .503 sizing die is really .501. Have you measured the die?

Remember spring back. "Soft lead" can surprise you with spring back.
Paper patched can really surprise you with spring back.
 
This reminds me that I need to order some sizers... now it's on my list for the day.
Want to come up with a smooth sided adjustable length .450 mold as well.
