Many ,many years ago one person of are hunting group killed two dear and needed help to field dress them. He came back to the camp to get help, we returned to the deer maybe a hour later. Both deer had been stripped of the back straps and hind legs deboned of meat. I always think of that when I'm trying to do that and it takes me over a hour for one deer and I'm not worried about anyone seeing me. Guess I don't do it enough to get it right.

Reduces the exposure to the pathogen's by limiting the amount of blood, bone marrow and other stuff that happens when gutting one. and during the butchering part. So actually, not off topic at all.
