We have had an Excaliber dehydrater for about 40 years that is excellent. It is a 10 or 12 tray if I remember right. Not cheap but excellent. The larger Cabelas is similar and may be made by Excalibur.

We’ve done all kinds of drying in it over the years. We’ve even made yogurt in it.

Vacuum packer was one of the best investments Ive made, pack my grains and nuts. Also whats great is you can vac pack a mason jar, put your dried stuff in their, dried fruit is usually sharp and can puncture the bag.

Tomatoes/SweetPeppers I give a light coating of salt.
 
I use the same unit. These are very well built.
A favorite here on the farm is canned pears in simple syrup and a touch of 23 year old rum or peach schnapps, and a half cinnamon stick. One year I couldn't can them fast enough so we tried the dehydrator. VERY nice indeed. The first piece tastes bland as cardboard. Then the sugar starts to show up on your pallet. If you don't stop yourself after 4 or 5 pieces you might plow through the whole jar.
