Thinly sliced, egg wash then coated with flour or flavored breadcrumbs.
PROPERLY fried...it will not be greasy and the folks in my house eat it up before any ever reaches the dinner table.
Same result with Fried Green Tomatoes as well. :hatsoff:

No just placed it on top once removed from the grill, was hot enough to just melt it.

I like them fried as well with bell peppers.
Grilled are the best I believe.

I love eggplant. I always peel it to remove the bitter rind. Especially good fried tempura style.
