The reason shimming is such a good method is because one is not deforming anything(sight or dovetail cut) to tighten the fit between shoulders and bottom. It also does not leave unsightly gaps to look at day light through from the side or for cleaning water to get under and corrode.
If shimmed well and sealed up with loc-tite it will look perfectly fit to the dovetail, have no gaps and can be moved or removed without damage to either the sight or barrel.
Pecking up the bottom of a dovetail with a pointed punch can transfer the metal displacement into the bore an amazing amount. I have seen a pistol barrel with a stamp impression transferred into the bore through nearly an eighth of an inch of steel.
