Two weeks ago I shot a doe for the first time in fifteen years. I used my yeager flinter in .54 caliber. Yesterday Ms. Audrey (my lovely wife) made up vegetable soup, her own special recipe, using the stewing chunks I had cut from pieces of meat that were too little to roast or steak, but were too tender for grinding into burger. It was superb. She tasted a cooked chunk before putting the batch into the vegetables to simmer. She said it couldn't be discerned from beef. No gamey taste, quite tender. I differ with her. The venison is finer grained than beef. As I said it was superb. Next, I think I will fire up the charcoal grill and do a four pack of burgers. I am a purist, they are strictly venison. I anticipate complete satisfaction.

Congratulations on the BP kill, Volatpluvia! :applause: I would bet you harvested your deer neer farmland... I'm a firm believer in hunting near cornfields. Best tasting venison I've ever had - corn & soybean fed - and the farmers are likely to let you hunt their land as well to help rid them of their "pests".

I think your burgers would have been way better with some beef fat ground in them. Venison is too lean by itself. Some bacon grease poured on them while grillin' might help.
 
We like the lean of just venison. Of course, we live in an area where all the deer are corn fed!

the only way to really enjoy venison is right after the gutting is done. you kindle a fire right on the spot cut out the inner loins and roast them over the fire on some green sticks it's like a gift from the gods. lip smackin good. all our venison in the lower peninsula are corn bean and alfalfa fed so there is no need to add pork unless thats the way you like your meat. :thumbsup:

My wife is also an Audrey. I grind a large amount of venison into hamburger. We don't buy beef hamburger at the grocery. Audrey takes Lipton onion soup mix and stirs it into the venison hamburger. I have had dozens of people eat the hamburgers and never knew they were eating venison. We use the venison hamburger just like regular beef hamburger for foods like spagetti, stuffed bell peppers and all kinds of soups.

This weekend while I was out deer hunting she made a huge pot of taco soup for a men's church group. They never knew they were eating venison.
 
Put cubes in with diced onion and celery. Soak some mushrooms and then heat these in a pan. Add some garlic, salt, pepper and cilantro. From there you can pan fry with wine and butter or toss into a croack pot with a water level to suit your taste and cook until very tender.

Some people insist on adding carrot or potatoes, but I like this over any kind of rice available.

When i have a gamey type piece of meat, and you
usually know, by the age and what has been available for the game to eat. Besides the bacon
fat or pork suet i like cooking with apples,
pears or even citrus fruits to help reduce the
gamey taste and nothing is better at this than
onion of any type.IMO
