I'm curious how "hair-on" hide is made into the flap of a hunting bag. Is the hide backed with anything or edged? I would also welcome any references or tutorials. Thanks much!

Depends on what you're looking for, a homespun or tailored bag. I've made bags like that before and I like the work to stand out from the crowd. So I would line it with linen or canvas and edge it with a similar colored leather

Most of the period bags I've seen with hair-on flaps were done with the flap in light leather and the hair-on hide sewn on. Some were done with just the fur as the flap: these tended to wear out faster, but from 150 years later it is hard to tell just when the fur wore out. It may be that the 2-piece flaps (leather base with sewn-on fur) was a commercial technique and copied by people making bags at home.
