-layer eggs with pearl onions and cut up hot pepper (whatever is available) to top. I like cayenne.
-Fill with white vinegar and let sit out for 4 weeks until eggs are soaked all the way through.

At work, we have a pickled egg contest every fall. Have a Heavy Weight Pickled Egg Championship Belt that gets passed to the year's winner. Serious egg trash talking. :haha: And natural gas to boot.
 
in a clean gallon jar put one small drained can of beets(not pickled. they'll pickle themselves directly), a thin sliced onion, a handful of peppercorns & maybe a clove or two of garlic. fill with as many hardboiled eggs as the jar will hold. fill jar to the top with juice you've saved from sweet pickled peppers or pickled cauliflower. put lid on good & tight & turn jar up on the lid & store in a cooll dark place for a few days to a week or so. sprinkle liberally with black pepper when ya eat'em & wash'em down with plenty of yer favorite ice cold beer.
