I recall my grandma telling me of eatin' possum when she was a child, coon too.
IMHO I would have to be AWFUL hungry to eat one (possum).I skinned a big boar coon years ago with the intention of eating him. When I got the hide off, he reminded me of a dog, and I couldn't do it.
 
I`d have to be starving before I ate a possum..Cant imagine what one looks like skinned
 
I tried dog once when I lived in China in 1984. Even then it was hard to find. Tastes like chicken :haha: Actually, it tasted like....lean red meat (not poultry).
 
I suppose you could skin them, but only way I've ever cleaned 'em is scalded and scraped like a pig. It's worth the trouble, nice fat young one is good eatin' roasted. Little greasy tho.
 
I was taught when I was a young lad never to shoot or kill possums cause if'n ya ever got lost in the woods that would be your meal ticket and a darn fine one at that
 
A young half grown possum looks a lot like a rabbit when it is skinned. It is a greasy sweet meat with a very good flavor. Best cooked where the grease can drip off like over a fire. I cooked one this deer season just so I would know.
 
Possums are carrion eaters, ifn' your going to et one you need to shut him in the corncrib for a few days to clean him out.

Coon is awful greasy and smells to high heaven when cooking. Had some at the legion a while back.
 
A man I used to work with said he quite eating them after he saw a possum crawl out from under a dead, half eaten cow. They make a mess around my home in the fall by eating dozens of pecans that fall in the ivy in the flower beds. They bring them on the front porch and have a feast. Then I have to clean up their mess, pecan shells everywhere.

Heck that is the best time to eat them, fat from the fall fruit and nut drops! A good young one fat from the drop is very good eating. Look for one that has been around persimmon drop or muscadine/fox grape, or maybe a corn field or apple orchard.
 
Angus Cameron lists three recipes for opossum in the L.L. Bean Game and Fish Cookbook, my favorite. I haven't tried any of them, but he says if you can remove most of the fat, all the glands and soak overnight in saltwater, it is very good eating with sweet potatoes, apple or sauerkraut.

Yes I agree, possum tastes great. Coon is good also. I have ate ground hog as well, beaver is very greasey but tastes excellent if you do out the glands (same as other 2 also). Our ider of what is good and not is because we are spoiled. The dog thing well thats just a personal wrong... I can't eat my best friend... any ways my best regards a loyalist Dawg :hatsoff:
 
I have caught 'em, caged 'em for awhile feeding apples and dog food, killed and scalded/scraped, stuffed with sliced apples, onion, sweet tater then bake in 375 d. oven until possum browns and stuffing is done, about 1 & 1/2 hours. remove cover last 30 minutes to brown. serve with biscuits and beans. then blow the roof off the house, it gives me gas something terrible.
