A pretty normal reaction, IMO. If you didn't feel that way, deer hunting would mean the same as going to the grocery store. I usually take some deep breaths to settle the nerves.
 
i bow hunt for two months prior to gun season. seeing deer up close really hones your hunting skills. but it can work against you too. once watched a buck coming at a distance, slow trot. i had the sights on him the whole time letting him get closer. when at 50-60 yards i fired. missed him clean. then my brother missed him so i didn't feel so bad. i think practice, knowing your weapon, hunting skill and a little luck are whats needed. chopper.
 
In addition to the excellent advice above (mental preparation, gear preparation, practice) add learning to control your physical response, i.e. relaxing. In its simplest form, you can purposefully tighten muscles to clench your fist, and you can also chose to relax those same muscles. This is frequently associated with stress managment, but with practice you can learn to consciously control reactions that we mistakenly think of aas beyond our control. good hunting/ bramble
