One method for rehydrating dried pumpkin is grinding it into flour. That flour can be used in breads or making soup.

I do love pumpkin soup. There are lots of ways to make it http://allrecipes.com/search/results/?wt=pumpkin soup&sort=re and I have found that I love most of them. Some not so much, but most that I have tried have been delicious.
